How to Store Spices: Home and Bulk Storage Tips

Spices lose colour and aroma when they are exposed to heat, light, air and moisture. A few simple habits keep them fresher for longer.

1. Use airtight containers. Keep spices in sealed jars, steel tins or food-grade bags. Close them tightly after every use.

2. Keep them cool, dark and dry. Store spices away from the stove, sunlight and the steam of a kettle. A closed cupboard is better than an open shelf.

3. Keep whole spices whole. Whole spices such as cumin, cardamom and pepper keep their aroma longer than ground ones. Grind small amounts when you need them.

4. Never use a wet spoon. Moisture causes clumping and spoilage. Use a dry spoon every time.

5. Label and date your containers. Write the date you opened or bought each pack. Smell the spice before using it. If the aroma is faint, it is past its best.

6. Bulk storage for businesses. Keep sealed bulk bags off the floor on pallets or racks, away from walls, in a clean dry room. Store strong-smelling spices separately, and use older stock first.
